Foodies rejoice I have a food post for you all after all the design related posts but to be fair I had been posting a lot of recipes and I like to switch things up. Today my mate and I decided we wanted to be lazy and stay in bed but we really couldn’t because my eldest sister was coming over to pick up the laptop I so kindly bought her for Christmas with the money I didn’t have (okay I have some money but I’m sort of cheap, well frugal, very frugal unless my mate wants something then I blow the coin). Luckily I got a super amazing deal on the laptop but it was still money. Anyways yeah, so said sister decided she wanted to stay the night after she showed up and I had already decided yesterday that I was going to make burritos for me and the mate but of course that changed. But my lovely mate decided to lend a hand in the kitchen and we came up with the delicious spicy beef burrito bake. My mate had made something like this before but it was more of a tortilla cheese lasagna bake which was awesome, so I stood back towards the end and just took pictures. Here is the recipe. Enjoy!
Ingredients:
1lb stir fry beef strips
2 1/2 tablespoons of butter
1/2 pack of taco seasoning (your choice, I used McCormick)
3/4 cup of small diced onion
2 tablespoons of salsa (your choice of brand and spice)
2 tablespoons of chicken broth
4 flour tortilla shells
1 cup of white rice
4 tablespoons of con queso (your choice of brand)
1/2 can of diced tomatoes (whole can 14.5 oz)
1 cup of shredded cheese
Wash and cut beef into small pieces
Dice up your onion and separate half of the seasoning from the packet
Drop 1 tablespoon of butter into hot skillet and add in seasoning and onion, add in the rest of the butter and mix
Add in the beef and mix well
Mix in half can of tomatoes and season to taste
Cook rice and add 2 tablespoons of chicken broth and 2 tablespoons of salsa, mix
Mix in rice and cover skillet until most of the broth is soaked up
Spray or oil your baking dish and layer on two tortillas, overlapping, then spread 2 tablespoons of con queso over them
Add half of your mix over the tortilla and con queso and sprinkle with a handful of shredded cheese
Add two more tortillas on top and repeat before putting the dish into a 350 degree oven for 15 minutes
Cut and serve hot
